Chipotle Gouda & Chorizo Chicken Sausage Galette

- Preheat the oven to 400°F.
- Heat oil in a skillet over medium-high heat. Add the onions and sauté until softened and slightly browned.
- Place the pie crust on a baking sheet and sprinkle the cheese in the center of the dough, leaving a 3-inch border of the crust.
- Place the onions over the cheese, then sprinkle the remaining cheese on top. Arrange the sausage coins and tomatoes on top of the cheese.
- Fold the edges of the pie crust over to form a galette crust, then brush with the egg wash.
- Bake for 30 minutes until the cheese has melted and crust is golden brown.
- Garnish with cilantro.
